One could play the backing part of the solo while the other plays the solo, or you can switch during the solo.

This.

On topic, it took me a while to get used to writing two guitar parts when I started my current band, but I now prefer it. We have a couple of songs where Tom plays and I just sing, but mainly I like to have it vary throughout the songs. There are usually bits when we both play the same, bits when what we're playing bares no similarity and sometimes bits where only one of us plays. The same formula never works every time, you should judge how to share out guitar parts depending on the song.
