I've used lsdj in the past, both emulated and on a cartridge. It took awhile to get used to the interface but there's a lot of cool shit you can do with it if you're specifically looking for the gameboy sound. I like the grado sr60 series, you kinda had to baby the 60i but the 60e seems like it has a sturdier cable.

Fakir is spot on with his post, if it isn't the LED or the switch being wired wrong then maybe you have the stereo jack wired incorrectly. According to this diagram you only need a mono jack but the stereo will work.
